This 2-ingredient chicken and dumplings recipe simplifies the traditional dish while still delivering the warm, hearty flavors that make it a favorite in many homes.
Ingredients
Scale:
2 cups cooked chicken, shredded
4 cups chicken broth
2 cups biscuit mix
2/3 cup milk
Instructions
In a large pot, combine the shredded chicken and chicken broth. Bring it to a gentle simmer over medium heat, allowing the flavors to meld together, which should take about 5-7 minutes.
In a separate bowl, mix together the biscuit mix and milk until just combined. Aim for a consistency that allows you to scoop spoonfuls without it falling apart.
Once the chicken broth is simmering, drop spoonfuls of the dumpling mixture onto the surface of the simmering broth, leaving space between each dumpling.
Cover the pot with a lid and let the dumplings steam in the broth for about 15-20 minutes. Do not lift the lid during this time.
After 15 minutes, remove the lid to check if the dumplings are cooked through; they should be fluffy and cooked all the way to the center.
Once done, ladle the chicken and dumplings into bowls and garnish with fresh herbs if desired. Serve hot for the best experience.
