Ingredients

To prepare the Jerky Roast Turkey, you’ll need the following ingredients:

For the Jerk Spice Marinade:

  • 2 tablespoons allspice berries (or 1 tablespoon ground allspice)
  • 6-8 Scotch bonnet peppers (or habanero peppers for milder heat)
  • 6 green onions, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon vinegar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground black pepper

For the Turkey:

  • 1 whole turkey (12-14 pounds)
  • 2-3 tablespoons vegetable oil
  • Salt and black pepper, to season

Instructions

1. Prepare the Jerk Spice Marinade: Start by making the flavorful jerk spice marinade. If you’re using whole allspice berries, grind them into a fine powder using a spice grinder.

2. Blend the Ingredients: In a blender or food processor, combine the ground allspice (or allspice powder), Scotch bonnet peppers, green onions, minced garlic, thyme leaves, grated ginger, brown sugar, soy sauce, vegetable oil, vinegar, cinnamon, nutmeg, and black pepper. Blend until you have a smooth and fragrant jerk spice paste.

3. Preheat the Oven: Preheat your oven to 325°F (163°C).

4. Prepare the Turkey: Make sure the turkey is completely thawed and clean. Remove any giblets and neck from the turkey’s cavity. Pat it dry with paper towels.

5. Season the Turkey: Rub the turkey with vegetable oil and season it with salt and black pepper, both inside and out.

6. Apply the Jerk Spice Marinade: Using your hands or a brush, coat the entire turkey with the jerk spice marinade, both on the surface and inside the cavity.

7. Truss the Turkey: Truss the turkey with kitchen twine to keep it in a compact and even shape. Tuck the wings under and tie the legs together.

8. Roast the Turkey: Place the marinated and trussed turkey on a roasting rack in a large roasting pan. Cover it with aluminum foil.

9. Roasting Time: Roast the turkey for approximately 3.5 to 4.5 hours, depending on its size, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. You can remove the foil during the last hour of cooking to achieve a crispy, golden skin.

10. Rest and Carve: Once the turkey is cooked, remove it from the oven and let it rest for about 20-30 minutes before carving. This ensures that the juices redistribute, keeping the meat moist and flavorful.

Cooking Notes

  • Adjust the number of Scotch bonnet peppers to control the heat level of your jerk spice marinade.
  • If you can’t find Scotch bonnet peppers, habanero peppers make a suitable substitute.

Variations

  • Customize your jerk spice blend by adding extra herbs like fresh rosemary, sage, or cilantro.
  • Experiment with different types of sweeteners in the marinade, such as honey or maple syrup, for a unique twist on the classic jerk spice.

Keto Version  For a keto-friendly Jerk Spice Thanksgiving Turkey, replace brown sugar with a keto-approved sweetener like erythritol or stevia. Ensure the soy sauce used is a low-sodium, gluten-free option or opt for coconut aminos. The turkey itself is naturally keto-friendly, so with these marinade adjustments, you can enjoy a delicious jerk-spiced turkey while sticking to your keto lifestyle.

Low-Carb Version To create a low-carb Jerk Spice Thanksgiving Turkey, replace the brown sugar in the marinade with a low-carb sweetener of your choice. Use a low-carb soy sauce or coconut aminos to reduce carb content. The rest of the turkey preparation remains low-carb, making it suitable for a low-carb diet.

This Jerk Spice Thanksgiving Turkey is the ultimate culinary adventure for your holiday feast. The bold and savory flavors of the jerk spice marinade transform the traditional turkey into a celebration of taste and aroma.
